- fried tofu
- five-spice (cinnamon, star anise)
- dark & light soy, palm sugar
- garlic, coriander root
Method
- Boil and peel the eggs; fry the pork belly until golden
- Fry garlic and coriander root; caramelise palm sugar with dark soy
- Add water, spices, pork, eggs and tofu; stew on low 40-60 min
- Adjust seasoning; serve with rice
How to Choose
Fresh eggs (easy to peel, centred yolk) · pork belly with pretty layers and fresh pink colour · fragrant fresh five-spice.
Chef's Secret
Secret: caramelise the palm sugar with dark soy before adding water for a rich colour and aroma; stew low and slow so the pork turns tender and the eggs soak up flavour even better the next day.
