Ingredients
- 1 red tilapia (600-800g)
- sliced chili + chopped garlic
- 2 tbsp fish sauce
- 2 tbsp palm sugar
- tamarind juice
- oil
Method
- Scale, clean, score and pat the fish dry; deep-fry until crisp all over
- Fry garlic and chili until fragrant
- Season with fish sauce, palm sugar and tamarind; simmer into a thick three-flavour sauce
- Pour over the crispy fish and serve hot
