Thai Basil Stir-Fry with Minced Pork (Pad Krapow Moo)

Ingredients

  • 200g minced pork
  • 1 handful holy basil
  • 1 tbsp pounded bird's-eye chili + garlic
  • 1 tbsp oyster sauce
  • 1 tsp light soy sauce
  • 1/2 tsp sugar
  • 2 tbsp oil

Method

  • Heat oil in a wok over high heat; fry pounded chili-garlic until fragrant
  • Add pork, stir-fry until cooked and crumbly
  • Season with oyster sauce, soy sauce and sugar; toss quickly
  • Turn off heat, add basil, toss until wilted; serve over hot rice

How to choose ingredients

Choose fresh pink minced pork, no smell, lightly marbled for juiciness. Fresh basil with unbruised leaves and tender stems.
