Ingredients

  • 300g fresh shrimp
  • Sliced lemongrass + sliced shallots
  • Mint leaves + spring onion & coriander
  • Dressing: fish sauce, lime, chili, a little sugar

Method

  • Blanch the shrimp in boiling water just until cooked; plunge into cold water so they stay bouncy
  • Mix the dressing sour, spicy and balanced
  • Toss the shrimp with lemongrass, shallots and dressing gently
  • Add mint, spring onion and coriander, toss again, and serve
