Ingredients
- 300g squid
- 2 salted egg yolks
- 1 tbsp butter
- garlic, chili
- spring onion/basil
- a little oyster sauce, sugar
Method
- Blanch squid briefly until just cooked (so it stays tender); drain
- Melt butter, fry garlic, add mashed salted egg and cook until foamy and fragrant
- Add squid, season with a little oyster sauce and sugar; toss quickly
- Add spring onion/basil and serve
