Ingredients
- 500 g chicken wings
- 2 tbsp fish sauce
- 1 tsp sugar
- 4 cloves garlic, crushed
- ground white pepper
- a light coating of crispy flour
- oil for frying
Method
- Marinate wings with fish sauce, sugar, garlic and pepper for 20 minutes
- Toss in a light coating of crispy flour
- Deep-fry in medium-hot oil until golden and crisp
- Drain and serve hot
How to Choose
Choose fresh pinkish-white wings with non-slimy skin; firm garlic cloves with no mould.

Secret: do not over-marinate or it turns too salty; fry on medium heat so it cooks through while crisp; double-fry briefly on high heat to stay crunchy longer.
