Baked Prawns with Glass Noodles

Ingredients
- 6 fresh prawns
- 1 pack soaked glass noodles
- julienned ginger
- pounded coriander root-garlic-pepper
- light & dark soy, oyster sauce, sugar
- pork/sesame oil
Method
- Mix sauce: light soy, dark soy, oyster sauce, sugar, a little water
- Layer oil, aromatics and ginger in the pot; add glass noodles tossed in sauce
- Place prawns on top; pour over remaining sauce; cover
- Bake/steam on medium 8-10 min until prawns are done; serve hot

Choose large fresh prawns with shiny firm shells, heads attached, bouncy flesh · mature aromatic ginger · glass noodles that stay clear and don't fall apart.
