Prawns in Spicy Fish-Sauce Dressing

Ingredients
- 8-10 fresh white prawns
- 5 garlic cloves
- bird's-eye chili
- 2 limes
- 2 tbsp fish sauce
- 1 tsp sugar
- coriander
Method
- Peel prawns (leave tails), devein, rinse
- Blanch briefly until colour just changes, then shock in ice water for bounce (or serve raw only if extremely fresh & clean)
- Pound garlic and chili; mix with lime, fish sauce and sugar
- Arrange prawns, spoon over dressing, add coriander; serve cold
How to Choose
Very important: choose the freshest prawns clear, firm, bouncy flesh, shiny shells, heads attached (not black), no fishy smell. Buy same-day and keep chilled throughout.
