Prawns in Spicy Fish-Sauce Dressing

Ingredients

  • 8-10 fresh white prawns
  • 5 garlic cloves
  • bird's-eye chili
  • 2 limes
  • 2 tbsp fish sauce
  • 1 tsp sugar
  • coriander

Method

  • Peel prawns (leave tails), devein, rinse
  • Blanch briefly until colour just changes, then shock in ice water for bounce (or serve raw only if extremely fresh & clean)
  • Pound garlic and chili; mix with lime, fish sauce and sugar
  • Arrange prawns, spoon over dressing, add coriander; serve cold

How to Choose

Very important: choose the freshest prawns clear, firm, bouncy flesh, shiny shells, heads attached (not black), no fishy smell. Buy same-day and keep chilled throughout.

Secret: shock blanched prawns in ice water for a crisp bounce; the dressing should be sour-first, then spicy, then salty pound the garlic and chili fresh; serve cold for the best taste.
