Steamed Sea Bass with Lime

Ingredients
- 1 sea bass (600-800g)
- 3 limes
- 1 head garlic
- bird's-eye chili
- fish sauce
- sugar
- Chinese celery, sliced lemongrass
Method
- Scale and clean the fish, score it, lay lemongrass underneath
- Steam on high 12-15 min (by size) until the flesh turns white
- Pound garlic and chili; mix with lime, fish sauce and sugar
- Pour the sauce over the hot fish, add celery; serve at once
