Stir-Fried Pork with Red Curry Paste & Yardlong Beans

Ingredients

  • 300 g minced pork or thinly sliced pork belly
  • 2 tbsp red curry paste
  • 1 handful yardlong beans, cut into pieces
  • 3-4 kaffir lime leaves, torn
  • fish sauce and sugar to taste
  • oil for stir-frying

Method

  • Heat oil and fry the curry paste until fragrant
  • Add the pork and stir-fry until cooked
  • Add the yardlong beans and stir-fry until crisp-tender
  • Season with fish sauce and sugar, add kaffir lime leaves, toss and turn off the heat
