Ingredients
- 200300g oysters/mussels
- Crispy batter (rice flour + tapioca starch, mixed with water)
- 2 eggs
- Bean sprouts + spring onion
- Chili/sriracha sauce for dipping
Method
- Mix the batter to a medium consistency; fold in the shellfish gently
- Heat oil in a pan; pour in batter + shellfish and fry until the edges crisp
- Crack in the eggs, let them set, then flip and fry the other side
- Add bean sprouts and spring onion, toss quickly, plate and serve with chili sauce
