Ingredients

  • 200300g oysters/mussels
  • Crispy batter (rice flour + tapioca starch, mixed with water)
  • 2 eggs
  • Bean sprouts + spring onion
  • Chili/sriracha sauce for dipping

Method

  • Mix the batter to a medium consistency; fold in the shellfish gently
  • Heat oil in a pan; pour in batter + shellfish and fry until the edges crisp
  • Crack in the eggs, let them set, then flip and fry the other side
  • Add bean sprouts and spring onion, toss quickly, plate and serve with chili sauce
