Ingredients
- 1 cup cooked/jasmine rice
- 150g minced pork, rolled into balls
- 12 eggs
- Sliced ginger + spring onion + coriander
- Light soy sauce + pepper + fried garlic
Method
- Simmer the rice in water/stock over low heat, stirring often, until it breaks down silky
- Roll the pork into balls and drop them in to cook through
- Season with light soy sauce; crack an egg to soft-poach in the bowl
- Top with ginger, spring onion, coriander, pepper and fried garlic; serve hot
How to choose ingredients
Choose fresh pink minced pork, lightly marbled for tenderness · Mature ginger's aroma cuts any porkiness · Jasmine rice cooks up fragrant and soft.
Chef's secret
Chef's secret: simmer low and stir often so the rice turns silky and doesn't catch on the bottom · roll the pork loosely so it stays soft and fluffy when cooked · crack the egg into the hot bowl so the white sets while the yolk stays runny the tastiest way.
Order fresh minced pork + jasmine rice + eggs as a set from Fresh Market Online.
